I'm supposed to watch kids while wife goes in to see about her case of double pneumonia. She's not that sick, but when you get a diagnosis like that, all sorts of stories arise later:

Simpli, hlkr, and I attended dinner at Province on Wednesday. Chef Zweiban came by the table twice to make sure we were happy, and he sent some comped sides to the table with our meals. Having the attention of the executive chef almost always makes for a nicer experience when I'm out spending money.

The food was up to par, as expected. We shared blue cheese fondue, smoked sable ceviche w papaya, pork meatballs, and peeky toe crab toast for apps. For dinner we ordered a pork ropa vieja with vanilla sweet mashed potatoes, striped bass, and a cheeseburger. Bread pudding for desert. The blue cheese fondue and ropa vieja were the big winners in my book, but I really enjoyed everything on the table.

The conversation was obviously the highlight. We covered everything from Illinois politics to national affairs to why so many bands these days name themselves after an animal. We were out the door for about $50. Well worth it and I look forward to the next outing.

it's a super legit place, but they have the "white folks menu" too.

the thing is, somebody along the line told them that when white folks come in offer them the most bland, most boring, most uninteresting food on the menu. because anytime i've gone in there, the wait staff -- who speak no english at all -- try to push the lame stuff on you.

that said, the chef took our order last night. and, after a brief attempt to push the lame stuff on us, the crew started asking for duck tongue, pig ears, etc. and he immediately got hip to the program. which was pretty cool.

as far as i can tell, one of the main difference between the legit / non-legit is that the legit stuff is seasoned and flavored with the real deal (tons of dried bits of chilis or mounds of pepercorn). so it isn't that we're asking for the hot stuff, it's more that the legit stuff is incredibly flavored with real-deal "hot" things and there's no way to dial-it-down a notch because it is what it is.

the same goes for even the non-hot things. instead of getting some pan fried dumplings like everywhere else you've ever been (which are always damn good) they also throw down the more legit boiled dumplings in a pretty intricate sauce (so instead of a plum favored sauce, you get a much more complex plum sauce that's actually made on site).

man, it's worth it.

I really enjoyed the meal

Highlights: I thought the ap's were all very solid. The dumplings were doused in a hot oil/vinegar/crushed garlic/ginger sauce. The Pigs ears had the consistency of really, really al dente pasta without much flavor, they were dressed with a splash of hot chili oil. Not all that flavorful but I definitely enjoyed the novelty factor, "hey kosher-keeping in law's... check me out." We all agreed that nelson would be fired up about the leftovers.
The scallion pancake was very tasty and the perfect consistency to sop up all of the luscious juices from the dumplings and piggy ears.

The Dry chicken chili, for me, was the standout dish. 1 part Bite-sized nuggets of chicken, (many pieces still had the skin on) fried up crisp and tossed into 2 parts of dried chili’s. The fried chili’s were not really for eating, but they gave up a ton of flavor and melted down into a lovely oil that sauced the chicken.

Duck tongues in plum sauce:
The first thing we did when the dish arrived was to dribble some of the delectable sauce onto the floor of the restaurant as a show of love and respect for the missing forters.
The sauce and accompanying veggies were awesome, but the consistency and gristly/bony nature of the actual tongue left something to be desired.

Fish in hot chili oil:
Not much actual flavor, but heat, lots and lots of heat. The dish is presented in a bubbling hot pot filled with oil, dried chilles, crushed chillis, chili pepper corns and various bits and noodles, scraps,veggies etc. I had a pork blood cake type thing. I think that the restaurant reuses the hot pot without actually swapping out the ingredients from the prior diner. They just add whatever the new customer orders. Good stuff.

Pocket tofu
A nice, soothing, cooling dish that was integral for breaking up the nonstop heat of the meal. Big fluffy football shaped tofu pieces in a standard corn starchy sauce with nice crisp veg and some tasty wood ear mushrooms

We did not order the house cured bacon or any of the rabbit dishes; those will be addressed on the next visit. The total bill, with a hefty tip came to $30 a man. A steal. It was excellent to convene with the Chicago crew and I look forward to making this a regular outing.

it would seem to me that you would need a decent number of duck tongues to make a meal...but i've never had them so perhaps they're very filling (or larger than you would tend to think)...

definitely the pocket tofu / light tofu (there's been an unresolved dispute for the last 12 months on lthforum about what it is actually called and i've got the right dish 2 times and the wrong one 2 times) -- damn that's good.

Last time we were there, we were strongly recommended to order off the chef's selection menu and not the full 15 page all-Chinese menu.
the chef selection was a 3x5 note card with like 10 of the least challenging menu items.

can't wait to tear into some Double Li Dry Chili Chicken, Spicy Tofu and Pork Blood, etc etc etc.

Here ya go -- PLAN AHEAD (dammit)!

Tonight there will be a Tentfort "in"-ing in Cleveland. It'll be attended by .5 jews and .5 gentiles. (I'm giving myself .5 for Judaism because my wife is Jewish and I'm constantly having to explain the various holidays to her. We're practically mishpokhe, simpli!)

The event will take place at my house where we (both my halves) will drink entirely too much Great Lakes Christmas Ale, watch Brady Quinn go from "promising" back to "DA's backup" inside of 2 quarters, and fall asleep on the couch wondering why we thought that 6th Christmas Ale was a good idea.
